Quito, Ecuador's capital, is a real treasure between the volcanoes of Pichincha, Cayambe and Antisana. At an elevation of 2830 meters, it is the second highest capital in the world. It was the first city classified by the UNESCO in 1978 and its historical centre is the largest and best maintained in Latin America. Departure at 8:30am: to get a good idea of the city, we will firstly go to the Panecillo, a small hill over the city with a statue of the Quito' Virgin, with a splendid 360º view. You will then visit part of Quito's colonial centre: the church of the "Compañia de Jesus"; the church of San Francisco and its convent/museum; the Grand Place where are located the Presidential Palace (Carondelet) and Quito's Cathedral; the district of La Ronda for, in particular, its craftsmen; SPECIAL AND EXCLUSIVE ACTIVITY: A guided dark chocolate tasting is a sensory exploration of terroir, varietal, origin, and craftsmanship on the same level of sophistication associated with wine and whisky tasting. As an additional option, pairing dark chocolate with certain wines and spirits offers yet another level of pleasure and complexity to the experience. How does this look in practice? An intimate setting around a table. In front of each person is a tasting plate with a raw cacao bean and samples of at least five different editions of To’ak chocolate. Each person is also served a flight of dessert wine and spirits, if this option is selected. Akin to a wine tasting, a member of To’ak’s production team guides everyone through a comprehensive tasting and pairing experience, with a focus on Ecuador’s famous Nacional cacao variety. Cacao genetics, terroir, fermentation methods, barrel-aging, and other production decisions are all explained in the context of how these variables influence the aroma and flavor profile of each expression of chocolate. Comparable to a course in Wine 101, but with the most luxurious and elaborate dark chocolate on the planet. To’ak uses the oldest and rarest cacao variety on earth to make extremely limited editions of single-origin Ecuadorian dark chocolate, with an emphasis on barrel-aging and other innovative production methods. It’s flagship edition was aged for three years in a French oak cognac cask and retails for $365 per bar, considered the most expensive chocolate in the world. Each bar is packaged in a hand-crafted Spanish Elm wood box with the individual bar number engraved on the back. It includes a 116-page booklet and specially designed tasting utensils that are used to explore the signature aroma of heirloom Ecuadorian cacao. To’ak is also working on-the-ground in Ecuador to conserve history’s most prized variety of cacao before it goes extinct. To’ak has been featured in Forbes, L.A. Domestic flight Quito - Coca (around 40 minutes). Arrival in Coca, gateway to the Amazon rainforest. Your local guide will meet you and lead you to your motorized canoe , which will sail for about 2h30 to get to the Yasuní National Park, classified by UNESCO "Biosphere Reserve" by a biodiversity of extreme wealth and well-preserved . The lodge we have chosen for you is the only hotel inside the reserve and offers, despite the difficulties of access, services worthy of a 4 star hotel keeping a real authenticity. To get respecting the environment and its occupants, the journey will continue by boat without motor (prohibited in the park) by another 1.30h. We will take a small tributary of the Napo River, opportunity to have a first contact with the local fauna and flora.
